ULTIMATE LEMON SQUARE

Ingredients:

Cookie Base
½ pound unsalted butter
2 ounces confectioner’s sugar
1 teaspoon vanilla extract
½ pound maida

lemon Topping
4 large eggs
1 pound sugar(refined)
3 ounces lemon juice
1 tbsp lemon zest
confectioner’s sugar for finishing

Method

Preheat oven to 180c. for base beat butter in a mixer or by hand, mix in sugar and vanilla until butter is light, add flour until mixed through. Spread dough over the bottom of a baking tray lined with butter paper, use spatula to make it even all over. Bake the base for 20 minutes until golden.

In a large mixing bowl whisk eggs, sugar, lemon juice and zest. As soon as base is baked, remove it from oven and pour the topping over and immediately return to the oven and bake for another 25-30 minutes until topping is set and firm. Let it cool.

To cut the squares, loosen the edges from the baking tray, take it out on a cutting board upside down, remove the butter paper, and turn it up on another cutting board so the topping faces u. cut small squares, dust with confectioner’s sugar and enjoy!
